Spicy Flavors of Mexican Food

Mexican chicken recipe Cheese Casserole

What you need

4 boneless chicken breasts, skinless, cut into small pieces
1 tablespoon of olive oil
1 cup of chicken broth
1 package corn tortilla chips
1 large onion, chopped
2 green peppers, chopped
2 pounds of shredded Mexican cheese
3 cans of condensed chicken soup cream
2 cans of Rotel tomatoes
1 tablespoon chili powder
2 teaspoons of garlic powder
Salt and pepper to taste

How to Make It

Preheat oven to 350 degrees Fahrenheit and spray the bottom of a 9 x 13 baking dish with nonstick cooking spray.

Cut chicken into bite size pieces, Brown the pieces in a skillet over medium heat with a tablespoon of olive oil. Add the cup of chicken broth, cover the skillet and poach for about 10 minutes over medium heat or until the chicken is cooked. Save the liquid and set aside.

Break chips tortilla into small pieces and place on the bottom of the dish in the oven.

Put the pieces cooked chicken atop crisp tortilla and then sprinkle with the chopped onions and green peppers. Add half the cheese. You can buy packages prepared Mexican cheese or make your own mixture using cheeses such as cheddar, Colby and spicy pepper.

In a large bowl, mix the cream of soup with chicken, canned tomatoes and seasonings and mix well. Spread the mixture on top of the other ingredients in the dish in the oven. Sprinkle the remaining cheese and then pour the chicken broth used to cook the chicken above all.

Bake at 350 degrees for about 45 minutes or until cheese starts to bubble.
